Keto-Approved Recipes

How are your New Year's resolutions going? One of mine is to continually post new recipes to Viva la Piva in 2019, and in January, my focus is on Keto-approved food!


Why Keto, you ask? I have a number of family and friends eating low-carb on the Ketogenic diet this new year, and after discovering many of my favorite dishes are naturally (or easily adapted to) Keto, I became inspired to share delicious, keto-friendly recipes to assist their dietary goals. I firmly believe food should never be boring, whether or not you have specific dietary needs!


A one-stop shop for all the Keto-approved dishes in my Recipe Box; this post will be updated to include any newly published Keto recipes. So, bookmark this page and check back frequently!



I was introduced to the Ketogenic diet by Alexis at Fit Girls SF. Utilizing Keto and exercise, she completely transformed her body, mind and spirit. (I mean, seriously, look at how she's cut!) She is an inspiring fitness and nutrition enthusiast, and perfectly depicts how life doesn't have to be consumed by health to be healthy. Keto-Approved Recipes

(Substitutions and serving suggestions where applicable)


Breakfast

Blender Jalapeño Hollandaise 

Serve over eggs & sautéed veggies for a Keto “eggs Benedict", or with virtually any protein / vegetable



Mains

Unstuffed Cabbage

Serve over cauliflower rice



Roasted Tomato Basil Soup 

Omit sugar or sub with tiny amount of stevia



Puerto Rican Shrimp

Serve over cauliflower rice



Parmesan Crusted Chicken

Sub breadcrumbs with Almond meal or ground/finely chopped nuts



Lemon Garlic and Herb Baked Salmon

Plays well with Tzatziki sauce (listed below in 'Sauces')




Salads

Caesar Salad 

Omit Worcestershire and croutons


Great with any protein on top! Preferably a fatty protein such as chicken thighs, rib eye steak, and braised or roasted pork


Jalapeno Coleslaw 

Omit sugar or sub with tiny amount of stevia


Great with any protein on top! Preferably a fatty protein such as chicken thighs, rib eye steak, and braised or roasted pork



Greek Salad

Omit honey or sub with tiny amount of stevia


Great over Romaine lettuce, or to make a full-Mediterranean inspired meal, serve with a pan-seared chicken breast, cauliflower rice and Tzatziki (listed below in 'Sauces')




Sides

Garlic Lemon and Parmesan Roasted Brussel Sprouts

Plays well with Parmesan Crusted Chicken (listed above in 'Mains')




Sauces

Tzatziki Sauce 

Omit honey or sub with tiny amount of stevia


Serve with virtually any protein / vegetable to transform the meal!



Avocado Crema 

Omit honey or sub with tiny amount of stevia


Serve with virtually any protein / vegetable to transform the meal!
