Blender Jalapeno Hollandaise Sauce

Inspired by flavors from The Boon Fly Cafe in Napa, this spicy hollandaise is not only insanely rich and decadent, but so easy that you will be kicking yourself for not making it part of your breakfast repertoire sooner.  


  • 6 Egg yolks

  • 1 Jalapeno, diced

  • 1/2 teaspoon Dijon mustard

  • 3 tablespoons Lemon juice

  • 1/4 teaspoon Paprika

  • 1 cup Butter

  • Salt and pepper to taste

​Melt butter in a saucepan over medium-low heat, and then keep warm over low heat, if needed.  In a blender, add egg yolks, jalapeno, dijon mustard, lemon juice and paprika, and blend until smooth.  Turn the blender on high with the lid on, but cap off.  Drizzle the warm butter in a thin stream through the blender opening - it should thicken almost immediately.  Season with salt and pepper to taste.  Share with someone you love!
