Waldorf Chicken

My version of an American classic!  A perfect combination of flavors and textures, this wholesome dish is as versatile as it is delicious.  Make it for picnics, meal prep, or to serve at a daytime gathering - it's truly a staple in our house, especially if we have leftover chicken!

Ingredients

  • 2 cups Rotisserie Chicken meat, diced

  • 2 stalks Celery, thinly sliced

  • 1 Red Apple, diced (gala, fuji, honeycrisp, pink lady, etc.)

  • 3/4 cup Red Grapes, halved

  • 3/4 cup Toasted Pecans, chopped

  • 1/2 cup Dried Cranberries

  • 1/4 cup Green Onions, thinly sliced

  • 1/4 cup Italian Parsley, chopped

  • 1/4 cup Plain Greek Yogurt 

  • 1/4 cup Mayonnaise

  • Salt And Pepper, to taste

​In a large bowl, add the chicken meat, celery, apple, grapes, pecans, dried cranberries, green onions, parsley, Greek yogurt and mayonnaise, and stir to combine.  Taste for seasoning, adding salt and pepper as needed.  Serve immediately.  Can be stored in the refrigerator for up to 3 days.

Serving suggestions:

  • Straight up

  • In a sandwich

  • In a wrap

  • Over a bed of lettuce

Yields roughly 4 servings
