Tzatziki Sauce
This refreshing and cool Greek yogurt sauce is bursting with bright flavors from cucumber, lemon, garlic and herbs. Traditionally topping gyros or used as a dip, this versatile sauce pairs beautifully with any protein or vegetable. Take your dish up a notch with a drizzle of Tzatziki!
Ingredients

1/2 medium English Cucumber, grated

1 cup Greek Yogurt

1 Garlic clove, finely grated or finely minced

Dash Cayenne (optional)

1 Lemon, juiced

1/4 cup mixed Fresh Herbs, chopped (dill, mint, thyme, parsley, tarragon, etc.)

1 tablespoon Honey

2 tablespoons Olive Oil

Salt and Pepper, to taste
Using a box grater, finely grate the cucumber. Place it into a fine mesh colander and press to drain the liquid from the cucumber (or wrap tightly in a clean kitchen towel to squeeze the liquid out). In a medium bowl, whisk the drained cucumber and remaining ingredients until well combined. Share with someone you love!
Note: Holds well in the refrigerator for up to 5 days, and only gets better with age!
