Unstuffed Cabbage
Hearty and comforting, yet easy on the waistline and pocketbook; Unstuffed Cabbage is sure to be a hit with the whole family, and is ideal for meal prep as it only gets better by the day!
Ingredients

2 lbs. Ground Beef

1 Onion, diced

3 Garlic Cloves, minced

1 tbsp. Italian Seasoning

Red Pepper Flakes, to taste (optional)

1 14oz. can Diced Tomatoes

1 1/2 cups tomato sauce

1/3 cup Broth or Water

1 (small) Head of Cabbage, chopped

Salt and Pepper, to taste

1 cup Italian Parsley, chopped
In a large Dutch oven or pot, cook the ground beef (broken into crumbles) over medium-high heat until almost cooked through. Add onions, garlic, Italian seasoning, and red pepper flakes; cook until onions are soft and meat is browned. Add diced tomatoes (with juices), tomato sauce and broth; mix until combined. Add cabbage and stir to coat. Lower heat to medium and cook until cabbage has softened, stirring occasionally, about 15 - 25 minutes. Stir in parsley, reserving some for garnish.
Serve over egg noodles, rice or cauliflower rice, and top with remaining parsley. Enjoy with someone you love!
