Jalapeno Coleslaw

Inspired by the iconic coleslaw from Bakesale Betty's in Oakland, California, this spicy and tangy coleslaw is not only a star side dish, but also the great base to a salad, or the perfect crunchy layer to tacos, sandwiches, burgers, sloppy joes...  Oh, the possibilities are endless!  

Ingredients

For the slaw:​

  • 1/2 head cabbage, thinly sliced

  • 2 jalapenos, cut in half lengthwise and thinly sliced

  • 1/2 red onion, thinly sliced

  • 1 large handful cilantro leaves, roughly chopped

For the dressing:

  • 2 limes, juiced

  • 1 tablespoon red wine vinegar

  • 1/2 teaspoon garlic powder

  • 1 teaspoon cumin

  • 1 teaspoon sugar

  • 1/4 cup olive oil 

  • Salt & pepper to taste

In a large bowl, combine all dressing ingredients.  Whisk until combined and smooth.  Salt and pepper to taste. 

 

Prepare the slaw ingredients by chopping the cilantro, and thinly slicing the cabbage, jalapeños and red onion.  (For ease, you can use a food processor set with the slicing blade attachment or a mandoline slicer to quickly and effortlessly prep the cabbage, jalapenos and red onion.) 

 

Add the slaw ingredients to the bowl with the dressing.  Toss to combine.  Enjoy the heat with someone you love!  

 

Serving Suggestions:

  • On a fried chicken sandwich, a la Bakesale Betty's

  • On tacos

  • On sloppy joes

  • As a side 

  • As the base of a salad

Yields roughly 6 servings
