Garnet Sweet Potato Soup
Garnet Sweet Potato Soup is packed with flavor, comfort, and nutrition! With a silky base of sweet potato and onion, and then loaded with vegetables, fresh herbs, and Aidells chicken-apple sausage; this soup is a winner in everyone's book for being absolutely delicious, hearty, naturally gluten-free, and easily adapted to vegan!
Ingredients

4 cups Stock (chicken or vegetable)

2 teaspoons fresh Thyme, minced

2 Bay Leaves

2 Sweet Onions, diced (Vidalia or Walla Walla are best)

3 cups Garnet Sweet Potatoes, peeled and diced (or any red-flesh sweet potato/yam)

1 cup Garnet Sweet Potatoes, peeled and cut into 1/4-inch thick half circles/bite size

1 cup Celery, thinly sliced

1 cup Potato, chopped/bite size

1 cup Carrot, thinly sliced

1 package Aidells Chicken-Apple Sausage, sliced/bite size (optional)

1/2 (10 ounce) package Frozen Corn

3 tablespoons fresh Parsley, minced

1/2 cup whipping cream, milk or sour cream (optional)

Salt and Pepper, to taste

Creme Fraiche, Crema Agria, or Sour cream, to serve (optional)
Bring stock, thyme, bay leaves, onions and diced sweet potatoes to a boil. Season with salt and pepper. Lower heat to medium, cover, and cook about 30 minutes until the sweet potatoes begin to break down. Stir occasionally.
Turn off heat. Remove and set aside the Bay leaves. Using a hand blender, blend the sweet potatoes and onions until smooth and creamy. Additional stock can be used to thin the soup, if needed. (Alternatively, a potato masher can be used - the soup will not be as velvety, but just as delicious! You may also use a food processor or blender, but use extreme caution when blending hot liquid! Process in small batches and vent to allow steam to escape.)
Return the Bay leaves to the pot. Over medium heat, add the sweet potato half circles, celery, potato and carrots. Season with salt and pepper. Cover and simmer about 15-20 minutes, or until vegetables are tender. Stir occasionally.
Add the corn, parsley and cream; stir until smooth. Remove the bay leaves. Adjust seasonings to taste. Serve with a dollop of creme fraiche. Enjoy with someone you love!
